Cashew Whipped Cream
Ingredients
- 1 cup raw cashew pieces
- 3 tbsp raw agave nectar
- 1/2 cup fresh orange juice
- 1 cup filtered water
Directions
I make this for brunch to top some waffles.
Soak the cashews in 1 cup filtered water for 1 hour if they are fresh. Save any used water. Put cashews in blender or food processor. Add agave nectar. Add the orange juice. Blend.
Add water a table spoon at a time and blend until the mixture has the consistency of a mud mask, or that chocolate in the snickers commercial. When it's whirling, you shouldn't be able to see the blades at the bottom.
Pour it into a tupperware and let it sit in the fridge for a couple hours or overnight. The fat in the cashews will help it to thicken when cold.
