My Tofu Scramble

Ingredients

  • 2 dashes turmeric
  • salt and pepper, to taste
  • 1 block of tofu, crumbled
  • 1 small onion, diced
  • 2 celery stalks, diced
  • 3 garlic cloves, diced
  • 2 medium carrots, shredded
  • 3 cups spinach, uncooked and loosely packed
  • 3 Tbsp. oil (recommend sesame or olive)
  • 1/4 cup nutritional yeast
  • 3 Tbsp. Braggs liquid aminos
  • 1/2 tsp. paprika
  • 1/2 tsp. cumin
  • cayenne pepper, to taste
  • 1 medium tomato, diced

Directions

In a frying pan on medium-high, heat oil and then saute onions, garlic until onions are translucent. Add spices, tofu, Braggs, carrots, nutritional yeast, celery and cook until celery and carrots are tender. Add spinach and tomato and cover until spinach reduces. Still covered, let simmer on lowish heat for 5-10 minutes being careful not to let anything stick to the bottom of the pan. Serve immediately.
