Chocolate Peanut Butter Mousse

Ingredients

  • 1 block tofu, firm
  • 1 1/2 cups chocolate chips, melted
  • 1 cup peanut butter
  • 1/4 cup sweetener (recommend brown sugar)
  • chocolate soy milk
  • 1 package graham crackers, finely crushed
  • 1/2 cup margarine, melted

Directions

Melt the chocolate chips in a double boil over low heat. Be careful not to burn the chocolate. Add the chocolate, tofu, peanut butter and sweetener together in a food processor. Blend, adding a little soy milk, until the mixture is even with no lumps.

To make the graham cracker crust, simply mix the graham crackers and margarine into a 9" pie plate. Press even against the bottom and sides.

Add the tofu filling to the graham crush and freeze for at least 2 hours.
