Chocolate Banana Nut Cookies

Ingredients

  • 1/2 cup shortening
  • 1 cup peanut butter
  • 1 cup sugar
  • 1 cup brown sugar
  • 1/2 tsp. baking soda
  • 1 cup mashed banana, very ripe
  • 1 tsp. vanilla
  • 2 cups flour
  • 1/3 cup unsweetened cocoa powder
  • 1 Tbs. vegetable oil
  • 1 cup walnuts, chopped

Directions

This recipe was inspired by the Chocolate Peanut Butter Fudge cooke recipe. I didn't have some of the ingredients and loved how the came out. The directions are pretty much the same:

Preheat oven to 375. Cream together shortening, oil and sugars. Add the banana and vanilla. Add the peanut butter and mix well. Combine dry ingredients and add to wet mixture. If dough is too dry add more peanut butter. Finish by adding walnuts. Drop balls on to cookie sheet. Bake at 375 degrees for 11-13 min. As usual, to keep cookies moist and chewy, place in an air-tight container after they have partially cooled.
