Pasta with Peanut Sauce

Ingredients

  • 8 ounces uncooked pasta
  • 1/2 cup peanut butter
  • 1cup hot water
  • 2 Tbs. Braggs liquid aminos
  • 2 Tbs. seasoned rice vinegar
  • 1 Tbs. sugar
  • 2 garlic cloves, minced
  • 1/2 tsp. ginger powder
  • 1/4 tsp. red pepper flakes or a pinch of cayenne
  • 3 green onions including tops, finely chopped

Directions

Cook the pasta in rapidly boiling water until it is just tender. Drain.

While the pasta is cooking, combine the peanut butter, water, soy sauce, vinegar, sugar, garlic, ginger, and red pepper flakes in a saucepan and whisk until smooth. Heat gently until slightly thickened. Add more water if the sauce becomes too thick.

Toss the cooked pasta with the sauce and sprinkle with chopped green onions. Serve immediately.
