Grilled Polenta
Ingredients
- 3/4 cup corn meal
- 3 cups vegetable stock
- 3/4 cup soy milk
- 1 tsp. margarine
- 1 tsp. minced garlic
- 1/2 tsp. salt
- 1/3 tsp. black pepper
Directions
In a medium saucepan, saute garlic in margarine. Add remaining ingredients and immediately whip and whisk until corn meal is dispersed evenly.
Over low head, cook polenta uncovered for 60 minutes, mixing frequently. Polenta is done when it has the consistency of Cream of Wheat.
Pour cooked polenta into an 8" x 8" baking dish sprayed with nonstick vegetable coating and sprinkle with corn meal. Cool to room temperature, then chill in refrigerator until firm.
Cut into 2" x 2" squares and grill or dry saute until the inside is warm and the ouside is crisp.
