Tahini Rotini with Broccoli and Lemon

Ingredients

  • 1/2 cup tahini
  • 2 Tbsp. soy sauce (or Braggs)
  • 1/8 tsp. cayanne pepper
  • 15 oz can of chickpeas (rinsed and drained)
  • juice of 1 lemon
  • 1 lb wheat rotini pasta
  • 2-3 cups of broccoli
  • 1 cup vegetable broth
  • 1/4 cup toasted sesame seeds
  • lemon zest

Directions

Put tahini, soy sauce, cayanne, lemon and chickpeas in a food processor until smooth. Put into a medium sized saucepan on simmer, add warm vegetable broth. Put pasta and broccoli in a shallow serving platter, pour sauce over and top with sesame seeds and lemon zest.
