Curried Rice Salad
Ingredients
- 1/2 cup basmati rice
- 1 cup water
- 3 Tbs. Creamy Curry Dressing (see Misc. category)
- 2 Tbs. raisins
- 1/4 cup small pineapple chunks
Directions
Combine rice and water. Cover the pan with a tight lid and bring to a boil. Turn down heat and simmer until all the water is absorbed (approx. 30 minutes). Fluff with a fork and set aside to cool.
In a medium bowl, combine cooked rice, Creamy Curry Dressing, raisins, and pineapple chunks. Mix well. Chill in a covered bowl for several hours before serving.
