Pesto

Ingredients

  • 1/4 cup walnuts
  • 1/4 cup pignolis
  • 3 tablespoons diced garlic (9 cloves)
  • 5 cups of basil leaves
  • 1 teaspoon kosher salt
  • 1 teaspoon of ground black pepper
  • 1 cup of good olive oil
  • 1/2 cup vegan parmesan cheese

Directions

1. Place walnuts, pignolis, nd grlic in the bowl of a food processor.
2. Process for 1 minute
3. Add basil, slat, pepper
4. With processor running, slowly pour the olive oil into the bowl throught he feed tube and process until the pesto is finely pureed. 5. Add parmesan and puree one minute.
6. Store in fridge or freezer with a thin film of oil on top.

Note: If there is not a lot of basil available you can use 1/2 basil and 1/2 fresh spinich.
