Zucchini Bread

Ingredients

  • 2 cups grated zucchini
  • Ener-G Egg Replacer for 3 eggs
  • 1 cup oil
  • 2 cups sugar
  • 2 tsp. vanilla
  • 3 cups flour
  • 1 tsp. salt
  • 1 Tbs. baking soda
  • 1 Tbs. cinnamon
  • 2 tsp. nutmeg
  • 1 tsp. baking powder
  • 3/4 cup raisins (optional)

Directions

Preheat the oven to 350, oil two 8.5" x 4.5" loaf pans. Mix zucchini, Egg Replacer, sugar, oil, vanilla in a large bowl. In another bowl, sift together flour, salt, baking soda, cinnamon, nutmeg, and baking powder. Gradually mix dry ingredients in with zucchini mixture. If including raisins, soak raisins in very hot water for 5 minutes before folding into mixture. Pour batter into two pans, bake 40-60 minutes.
