Stuffed Red Peppers
Ingredients
- 1 can of black beans
- prepackaged mult-grain rice
- 3 large red peppers, halved and blanched
- 1 cup of hot salsa
- cheese topping (optional)
Directions
These peppers are very easy to make and make a great dinner. Half the red peppers and clean out the inside. To blanch the peppers: put the halves in boiling water for two minutes and cool with cold water. Mix the prepared rice, salsa and black beans in a bowl and fill the peppers. Stuff the peppers will filling and place in a large pan. Top with cheese or cheese substitute. Place in preheated oven of 350 for 10-15 minutes, or until hot. Serve. Goes great with a green salad and warm tortillas.
