Eggless Salad
Ingredients
- 1/4 tsp. honey
- 1/4 tsp. tumeric
- 2 Tbsp. sweet pickle relish
- 2 Tbsp. minced celery
- 3 Tbsp. light soy mayonnaise
- 1/2 tsp. minced fresh dill
- 1/8 tsp. freshly ground black pepper
- 1 pkg. tofu (firm or extra-firm)
- 2 Tbsp. minced scallions
- 1/8 tsp. salt
- 1/8 tsp. dry mustard
- 1 tsp. minced capers
Directions
Drain tofu and pat dry with paper towels. Grate tofu as you would cheese into a bowl. In another bowl, mix mayonnaise, honey, salt and tumeric. Add tofu. Mix in remaining ingredients. Refrigerate for 30 minutes. Sever on sandwiches or as a dip for chips.
