Best tofu whipped cream
Ingredients
- 11/3 cup soft tofu
- 1/4 cup melted margarine (or 1/4 cup oil)
- 3 Tbsp. sugar
- 1 1/2 tsp. vanilla
- 1/2 tsp. vanilla
- 1/2 tsp. lemon juice
- 1 Tbs favoriate liqueur (optional)
Directions
Place all of the ingredients in a blender or food processor and blend for several minutes, or until VERY smooth and fluffy. Scrape into a small bowl, cover tightly and refrigerate for AT LEAST four hours before serving. This will keep for several days refrigerated.
You can also substitute 1/4 cup raw cashews, ground very fine, for the margerine or oil.
